Glasgow 1770 Sherry Cask Matured

Our mission
The name ‘Glasgow 1770’ is a tribute to the founding date of the original ‘Glasgow Distillery Company’. Our city once boasted over 30 working whisky distilleries, and the original ‘Glasgow Distillery’, as they were known for a time, were one of the largest in the world until 1902, when it closed its doors. We take on their legacy with a mission to bring quality Glasgow-made spirits back to our city and to the world.

Glasgow 1770 Sherry Cask Matured
Sherry Cask Matured marries together equal proportions of two of our whisky production styles: double distilled unpeated single malt and double distilled peated single malt.

Production Summary
Barley: unpeated and peated malted barley sourced from around the UK.
Water: our local soft Scottish water sourced from Loch Katrine.
Yeast: A minimum of 72 hours of fermentation within our washbacks using MG Pinnacle Distillers Yeast, which gives us a rich and fruity flavour profile.

Distillation
Two very slow distillations within our small copper pot stills; first within a 2,500 litre wash still, and then within a smaller 1,500 litre spirit still. These stills are run very slowly to produce a fruit-forward new make spirit.

When producing our unpeated double distilled style, a medium cut point of 72% - 63% is taken for the hearts. This gives a fruity new make spirit that has a rich tactility across the palate.

When producing our peated double distilled style, a low cut point of 72% - 57% is taken for the hearts to provide a rich and flavour-packed new make spirit which has an oily and waxy tactility across the palate.

This new make is then reduced to 63.5% ABV before being filled into casks for maturation.

Maturation
This 6 year old bottling marries together eight casks in total: four unpeated casks with four peated casks.

The unpeated casks were initially matured within ex-Bourbon barrels for 5 years, before re-racking into Ximénez-Spínola Pedro Ximénez Sherry hogsheads for a minimum of 2 years and 1 month.

The peated casks were initially matured within ex-Bourbon barrels for 3 and a half years, before re-racking into Ximénez-Spínola Medium Sherry hogsheads for 3 years and 2 months.

These eight casks were then married together before bottling.

Bottling
Glasgow 1770 Sherry Cask Matured is presented at a batch strength of 55% ABV. This product is non-chill filtered, which means as much flavour and mouthfeel within the bottle as possible. This bottle is also presented at natural colour.

The result is a rich and fruity single malt with notes of dark fruits, orange peel, toffee apples and cedarwood, with hints of ground coffee and a lasting tendril of sweet smoke throughout.
